Botanico Red Seal — 6-Year Oak Barrel-Aged Organic Greek Balsamic Vinegar | Domaine Costa Lazaridi, Drama | 8.45oz
Botanico Red Seal is a 6-year oak barrel-aged organic balsamic vinegar from Domaine Costa Lazaridi, produced in Drama, northern Greece — the same estate that pioneered modern viticulture in the region when Costa Lazaridis planted the first modern linear vineyard there in 1979. All Botanico balsamics are made exclusively from grapes grown on the domaine's own private vineyards. No blending from outside sources. No shortcuts.
The technique follows the traditional method of the Aceto Balsamico Tradizionale of Modena — cooked grape must, aged in successive oak barrels, developed over years rather than months. Six years in oak produces the concentration, complexity, and balance that makes this the everyday-premium choice in the Botanico range: rich enough for special occasions, accessible enough for daily cooking.
Tasting notes
Appearance: Dense with dark mahogany hues
Aroma: Complex bouquet — coffee, raisin, and crushed fruit, with the presence of vinegar receding behind the fruit
Palate: Concentrated and rich; the initial acidity gives way progressively to sweetness
Acidity: 6%
About the producer
Domaine Costa Lazaridi was founded in 1979 by Costa Lazaridis in Xiropotamos, on the slopes of Mount Falakro in Drama, northern Greece — he established the first modern linear vineyard in the region. The Botanico range extends the domaine's expertise from wine into balsamic vinegar, using grape-based condiment traditions with a documented history of over 2,500 years. Every Botanico product is made from grapes grown exclusively on the domaine's private vineyards in Drama.
What makes Botanico different from Italian balsamic
Botanico uses the traditional Aceto Balsamico Tradizionale method of Modena — cooked grape must, successive barrel aging — applied to organically grown Greek grape varieties from Drama. The result is a Greek balsamic with genuine Italian technique, made on a winemaker's estate from single-origin grapes, not a commodity blend. Certified organic. No artificial colorants. No artificial additives.
How to use it

- Caprese — finish tomatoes, mozzarella, and fresh basil

- Beef carpaccio — the producer's own pairing recommendation

Frequently Asked Questions
-
What makes this different from supermarket balsamic?
Most commercial balsamic vinegar is not aged — it is wine vinegar with caramel color and thickeners added. Botanico Red Seal is genuinely aged for 6 years in oak barrels using traditional cooked-grape-must methods, from certified organic grapes grown on Domaine Costa Lazaridi's own vineyards in Drama. The concentration, flavor depth, and acidity profile are fundamentally different. -
Is this the same as Balsamic Vinegar of Modena?
It uses the same traditional technique (cooked grape must, successive barrel aging), applied to Greek organic grape varieties from Drama, northern Greece. It is not geographically a Modena product, but it follows the same method with the same commitment to quality. -
How long does it last after opening?
Store at room temperature, away from direct light. Like all true barrel-aged balsamics, it keeps for years after opening with no refrigeration required. -
What is the Botanico Gold Seal and how does it compare?
The Gold Seal is aged for 10 years — the flagship of the range, more concentrated and complex, reserved for special occasions and finishing use only. The Red Seal is the everyday-premium choice: enough complexity for the table, versatile enough for daily cooking.

Great creamy feta! Wished there was a 2lb container
Incredibly reasonably price! Quality oil, and the time was taken to wrap and double wrap the cans for protection during shipping! Highly recommend!
I loved this cheese! To the point that I never liked any cheese at all (41 years) of hating all cheese. But once I tried it it opened my world to cheeses again.
Thought I was back in Crete. Absolutely incredible.
