Koroneiki olives from Laconia, extracted at low temperature with a shortened malaxation cycle. Less heat and less time in the mixer means more of the polyphenols survive into the bottle, which is what you taste as the peppery catch at the back of the throat.
Independently tested at 522 mg/kg total polyphenols under certificate C2526-00733. This is a finishing oil, meant for raw use on bread, salads and finished dishes.

Our Story
Alpha Omega Imports was founded in Timonium, Maryland in 2016 by two partners with roots on opposite ends of Greece. Petros Dimakis comes from a farming family in Martino Lokridas. Giannis Sfakianoudis is from Chios, and he and his family still return to the island every year during the mastiha harvest.
That is not a marketing line. It is the reason we can tell you which dairy aged your feta, which basin grew your peppers, and what a lab measured in your olive oil. If a product cannot be traced to a producer, a region and a tradition, it does not go in the catalogue.
