Botanico Gold Seal — 10-Year Oak Barrel-Aged Organic Greek Balsamic Vinegar | Domaine Costa Lazaridi, Drama | 3.38oz
Botanico Gold Seal is the flagship of the Botanico range — a 10-year oak barrel-aged organic balsamic vinegar from Domaine Costa Lazaridi in Drama, northern Greece. Made from grapes grown exclusively on the domaine's own private vineyards, using the traditional technique of the Aceto Balsamico Tradizionale of Modena. A decade in oak produces something that is no longer just a condiment — it is a finishing ingredient: viscous, superconcentrated, with a long and complex sweetness that a few drops deliver to the dish.
Domaine Costa Lazaridi was founded in 1979 by Costa Lazaridis in Xiropotamos, on the slopes of Mount Falakro — he established the first modern linear vineyard in Drama, a region now recognized as one of northern Greece's most important wine-producing areas. The Botanico range applies that same precision to balsamic vinegar, using grape-based condiment traditions with a history of over 2,500 years.
Tasting notes
Appearance: Deep mahogany, viscous, superconcentrated
Aroma: Caramel, dried fruit, raisin, honey — layered and persistent
Palate: Big intensity and depth; the sweetness is pronounced, the finish long and discreet
Finish: Persistent, sweet, complex
When to use the Gold Seal
This is a finishing balsamic — not a cooking ingredient. The 10-year concentration means a few drops go a long way and deliver more impact than a tablespoon of a younger vinegar. Use it where the balsamic is the point, not the background.
- Aged cheeses — a few drops over Parmigiano Reggiano, aged Graviera, or Pecorino
- Strawberries — the classic pairing; the sweetness amplifies the fruit
- Foie gras or charcuterie boards — finishes with depth and sweetness
- Grilled meats — drizzle over steak or lamb after resting
- Risotto — a few drops at the finish, not cooked in
- Vanilla ice cream — a few drops over a scoop is one of the simplest gourmet finishes
- Sip neat — a single drop on the wrist is the traditional way to taste a true aged balsamic
About the producer
Domaine Costa Lazaridi pioneered modern viticulture in Drama in 1979 and built the region's first modern winery in 1986. The Botanico balsamic range is made on the same estate, from the same privately grown organic grapes, using traditional Aceto Balsamico Tradizionale techniques. Every drop in every bottle has been on the estate from grape to jar.

Frequently Asked Questions
-
Why is it 100ml and not 250ml like the Red Seal?
Because you use far less. The 10-year concentration means a few drops deliver what a tablespoon of a younger balsamic would. 100ml used carefully lasts as long as a larger bottle of a lesser product. -
Should I cook with this?
No — heat destroys the compounds that 10 years of aging developed. Use it raw, as a finishing condiment. The Red Seal (6-year) is the better choice if you want a balsamic for cooking and dressings. -
How is this different from the Red Seal?
Four additional years in oak. The Gold Seal is more viscous, more concentrated, and sweeter — intended for finishing and special occasions rather than everyday cooking. Think of the Red Seal as the daily luxury and the Gold Seal as the occasion bottle. -
What makes Botanico different from Modena balsamic?
Same traditional technique, different terroir. Botanico uses certified organic Greek grape varieties from Domaine Costa Lazaridi's own vineyards in Drama, northern Greece. The method is the same; the grapes and the land are Greek.

Fantastic! A big reminder of the Tavernas we visited in Greece. Highly recommend! It’s the real deal.
Great creamy feta! Wished there was a 2lb container
Incredibly reasonably price! Quality oil, and the time was taken to wrap and double wrap the cans for protection during shipping! Highly recommend!
I loved this cheese! To the point that I never liked any cheese at all (41 years) of hating all cheese. But once I tried it it opened my world to cheeses again.
