Organic Florina red peppers, slow-cooked to a smooth, concentrated spread. Rich, velvety, deeply sweet. Produced by the Naoumidis family at their stone-built Pepper Mill in Agios Panteleimon, Amyntaio, Florina — a family operation since 1972, recognised as one of the 10 best food producers in Greece at the HELEXPO food festival and featured on national Greek television (ERT 3, Alpha TV).
The Naoumidis family farms 80 acres of Florina peppers at 610 metres altitude, at the foot of Mount Vorra, between Lakes Vegoritida and Petra. No pesticides. Fertilised only with free-range animal manure. Planted and harvested by hand. The same organic Florina peppers used in their Filetopiperia are reduced here into a dense, smooth spread — all the natural sweetness of the Florina variety, concentrated, silky, and versatile in a way that whole roasted peppers cannot be.
Why Florina Peppers?
The Florina pepper is a PDO-recognized variety grown exclusively in the Florina region of northern Greece. Its thick flesh, natural sweetness, and low water content make it one of the few varieties that reduces beautifully — concentrating flavour rather than turning bitter or watery. The Naoumidis family was instrumental in establishing the Florina pepper's Designation of Origin status.
