Eliovi is Alpha Omega Imports' own blend — formulated to do one thing precisely: turn a pour of Greek extra virgin olive oil into a dipping sauce worth sitting down for. Five ingredients: sea salt, garlic, oregano, thyme, and red pepper flakes. Nothing else. No fillers, no anti-caking agents, no artificial flavors. What's in the jar is what's on the label.
The oregano anchors the blend — Greek mountain oregano, Origanum vulgare subsp. hirtum, the variety used in Greek kitchens and on every taverna table. Sharper, more aromatic, and more potent than common supermarket oregano. When you crush it between your fingers over olive oil, the volatile oils release immediately. You will smell the difference before you taste it.
Thyme deepens the base behind the oregano. Garlic and red pepper flakes anchor the savory backbone and add background warmth. Sea salt ties everything together. The proportion is deliberate: the blend is designed to season the oil, not overpower it. Use it with a Greek EVOO that has its own character — the Sparta Gourmet 3L or the Sparta Gourmet Premiere — and the combination is the point.
How to Use It
- Bread dipping — pour Sparta Gourmet EVOO into a shallow bowl, add a generous pinch of Eliovi, let it sit for two minutes. That's the dip. Serve with crusty bread or warm pita.
- Horiatiki seasoning — crush between your fingers directly over the feta slab and salad at the table. The oregano releases on contact with the oil-dressed vegetables.
- Marinade base — combine with EVOO, lemon juice, and a splash of red wine vinegar for a Greek marinade for chicken, lamb, or pork. Coat and refrigerate for at least two hours.
- Roasted vegetables — toss potatoes, courgette, or aubergine in EVOO, coat with Eliovi, roast at 400°F until caramelized.
