How to Read an Olive Oil Certificate of Analysis (Before You Trust the Label)

"Lab tested." "Certified high polyphenol." "Verified by independent analysis." These phrases now appear on olive oil labels everywhere — and most of the time, no document follows them. A Certificate of Analysis (CoA) is that document: a dated report from a named laboratory measuring what is actually in the bottle. It is the single strongest piece of evidence an olive oil producer can offer, and almost nobody teaches consumers how to read one. This guide fixes that, line by line, using a real certificate as the worked example.

Who Issues a Real CoA

A credible certificate comes from an accredited, named laboratory — not from the producer's own marketing department. In the olive oil world, one of the most respected is the World Olive Center for Health in Athens, a scientific organization specializing in phenolic analysis of olive oils. University chemistry departments and ISO-accredited food laboratories also issue them. The certificate must carry the lab's name, a unique certificate number, and an analysis date. Any "certification" missing those three elements is a graphic, not a document.

The Testing Methods — and Why They Matter

Not all polyphenol numbers are created equal, because not all measurement methods are. The Folin-Ciocalteu colorimetric method is the oldest and cheapest — and it systematically overestimates, because it reacts with compounds that aren't phenols at all. HPLC (high-performance liquid chromatography) separates and quantifies individual phenolic compounds with far greater accuracy. qNMR (quantitative nuclear magnetic resonance) is the modern gold standard for measuring the key health-relevant compounds — oleocanthal and oleacein — and is the method behind the most rigorous certificates. When comparing two oils' polyphenol claims, ask which method produced each number. A 600 mg/kg Folin figure and a 500 mg/kg qNMR figure are not comparable — and the second oil may well be the stronger one.

Reading the Lines That Matter

Take a real certificate: the World Olive Center for Health analysis of our Sparta Gourmet Premiere — Certificate No. C2526-00733, analyzed 16 February 2026, published in full on the product page. Here's what each line tells you.

Total polyphenols: 522 mg/kg. The headline number — total phenolic content. Anything above roughly 250 mg/kg is generally considered high-polyphenol territory; 500+ places an oil in the upper tier of commercially available EVOOs.

Oleocanthal: 176 mg/kg and Oleacein: 117 mg/kg. The two most-studied individual phenols — responsible for the peppery catch in the throat and the anti-inflammatory research interest. A certificate that names them individually (rather than only a total) signals more rigorous analysis.

D1 Index: 293. The sum of oleocanthal and oleacein — a standard shorthand among researchers for combined phenolic strength of the two key compounds.

Hydroxytyrosol derivatives: 204 mg/kg. This is the line that connects to European law. Under EU Regulation 432/2012, an olive oil may carry the official health claim — that its polyphenols "contribute to the protection of blood lipids from oxidative stress" — only if 20g of the oil provides at least 5 mg of hydroxytyrosol and its derivatives. On this certificate, a 20g serving provides approximately 10.45 mg — roughly double the threshold. When a label claims "exceeds EU health claim standards," this is the line that proves or disproves it.

Red Flags: When "Lab Tested" Isn't

Walk away from, or at least question, any of the following: a polyphenol claim with no downloadable or viewable certificate; a certificate with no laboratory name, number, or date; a number with no stated testing method; a certificate older than the current harvest being sold; and — the subtlest one — a certificate for one product quietly implied to cover a producer's entire range.
