What K270, K232, and Delta K Actually Measure
Extra virgin olive oil (EVOO) is valued for its polyphenol content — antioxidant compounds with anti-inflammatory properties. Alongside acidity and sensory testing, olive oil chemists also use a set of spectrophotometric readings — K270, K232, and Delta K — to assess freshness and oxidative state. These values measure how much the oil has been exposed to oxidation, heat, or poor storage, which in turn affects how many of those polyphenols actually survive to the bottle.

Lower K270 and K232 values indicate less oxidation and better preservation of the oil's beneficial compounds. These are standard International Olive Council metrics used across the industry to distinguish genuinely fresh, well-handled EVOO from oil that has degraded before it reaches the shelf.
Why This Matters More Than the Acidity Number Alone
Most labels only disclose acidity, which tells you whether an oil legally qualifies as extra virgin — but says little about how it's been handled since. K270 and K232 catch what acidity misses: an oil can be technically under 0.8% acidity and still be oxidized and flat-tasting if it sat too long before pressing, or was stored poorly afterward.
This is why harvest timing and hours-to-press matter so much for a genuinely high-quality EVOO. Our Sparta Gourmet EVOO, single-estate Koroneiki from the Georgiou family grove in Laconia, is pressed within 24 hours of harvest specifically to minimize oxidation before it's even bottled — and our Sparta Gourmet Premiere is independently lab-certified at 522 mg/kg total polyphenols by the World Olive Center for Health (Certificate C2526-00733, February 2026). We don't currently publish independent K270/K232 results for our line — if that testing is done in the future, we'll update this page with the certificate.
