What is Greek coffee and how do I make it?
Greek coffee (ellinikos kafes) is an unfiltered coffee brewed in a small copper or stainless pot called a briki. Loumidis Papagalos is the classic brand — an extra-fine grind traditional roast used by Greek households and cafes for over a century. To brew: add one heaped teaspoon of coffee and one teaspoon of sugar (optional) per demitasse cup of cold water to the briki, stir, and heat slowly over low flame until foam (kaimaki) rises. Remove before it boils. Serve in a small cup and let the grounds settle before drinking.
What is Ethiopia Yirgacheffe coffee known for?
Yirgacheffe is a sub-region of the Sidama zone in southern Ethiopia and is considered the birthplace of coffee. Orinoco's Ethiopia Yirgacheffe is a medium roast with bright, clean floral aromas, subtle citrus acidity, and a smooth sweet finish — a light to medium body that is ideal for pour-over, drip, or Chemex brewing methods. It is one of the most distinctive and celebrated single-origin coffees in the world.
