Olive Oil Polyphenol Content Guide: What mg/kg Numbers Actually Mean

Walk through any list of "best high-polyphenol olive oils" and you will see numbers everywhere: 400 mg/kg, 700 mg/kg, even claims above 3,000. Some are lab-certified. Many are marketing. This guide explains what the numbers mean, where the official thresholds sit, and how to tell a verified figure from a hopeful one — so you can judge any bottle, including ours.

What polyphenols are — and why the peppery burn matters

Polyphenols are the natural phenolic compounds an olive tree produces to protect its fruit. In a fresh, early-harvest extra virgin olive oil they survive into the bottle, and you can taste them: the bitterness on the tongue and the peppery catch at the back of the throat are oleocanthal and oleacein announcing themselves. The number that matters: EU Regulation 432/2012

There is one legally meaningful benchmark in Europe. Under EU Regulation 432/2012, an olive oil may carry the approved polyphenol health claim when it delivers at least 5 mg of hydroxytyrosol and its derivatives per 20 g of oil — which works out to roughly 250 mg/kg. In practice, the industry treats anything verified above 250 mg/kg as high-polyphenol. Below that line, an oil is still perfectly good food; it simply is not a high-phenolic oil, whatever the label art suggests.

Reading the ranges

As a rule of thumb from published lab analyses: typical supermarket extra virgin olive oil measures somewhere around 100–250 mg/kg total polyphenols. Verified high-polyphenol oils run 250–500 mg/kg. Above 500 mg/kg you are in the top tier — usually early-harvest, single-estate oils pressed within hours of picking, produced in small quantities and priced accordingly. A handful of specialist "medicinal" oils claim 1,000+ mg/kg; at those levels the oil is intensely bitter and used by the spoonful rather than the ladle.

How the numbers are actually measured

Serious producers send each harvest to an accredited laboratory for HPLC or NMR analysis. In Greece, the reference institution is the World Olive Center for Health in Athens, which issues a certificate of analysis listing total polyphenols and the individual compounds — oleocanthal, oleacein, hydroxytyrosol and tyrosol derivatives. A real certificate has a certificate number, an analysis date, and a harvest it corresponds to. Polyphenol content falls as oil ages and changes with every harvest, so a number without a date is a number without meaning.

A worked example: reading a real certificate

Our Sparta Gourmet Premiere Koroneiki EVOO was analyzed by the World Olive Center for Health on 16 February 2026 (Certificate No. C2526-00733). The certificate reads: 522 mg/kg total polyphenols, with oleocanthal at 176 mg/kg and oleacein at 117 mg/kg. A 20 g serving provides approximately 10.45 mg of hydroxytyrosol and tyrosol derivatives — roughly double the EU Regulation 432/2012 threshold. Those numbers are not an accident of marketing. They come from three deliberate choices at the Georgiou family grove in Laconia: the Koroneiki variety, which is naturally among the most phenolic olives grown anywhere; an early November harvest, when phenolic content peaks and yield is lowest; and cold extraction within hours of picking. Laconia has been making these trade-offs for a very long time — olive oil from the valleys around Sparta fed the ancient Spartan diet, and the region's groves have run on the same early-harvest logic for over a century of the Georgiou family's own history.

Can you cook with a high-polyphenol oil?

You can — polyphenols actually make an oil more stable at heat, not less. But heat gradually degrades the very compounds you paid for. The practical answer is to keep two oils: a robust everyday Greek EVOO such as the Sparta Gourmet 3L tin for cooking, and a certified high-phenolic oil used raw — finishing, dipping, dressings — where the full phenolic profile reaches the plate intact.

How to verify any brand's claim in 30 seconds

Ask three questions. Is there a certificate of analysis from a named laboratory? Does it state the harvest year the number belongs to? Does the mg/kg figure appear on the certificate itself, not just the website? If a producer cannot show you all three, treat the claim as decoration. The brands worth your money publish the paperwork.
