Laconia sits in the southern Peloponnese, between the Taygetos and Parnon mountain ranges. The ancient Spartans built their civilization in this valley and the olive groves here have been producing for centuries. Sparta Gourmet's growers farm this terrain — stony, well-drained soil, hot dry summers, cold winters — precisely the conditions that stress Koroneiki trees and concentrate phenolic compounds in the fruit rather than simply building volume.
That terroir is not incidental. It is the reason the oil tastes the way it does: the throat-catch, the bitterness, the pepper finish that tells you the polyphenols are present and the oil is genuinely fresh.
100% Koroneiki, cold-extracted at low temperature
Sparta Gourmet is a mono-varietal Koroneiki — not a blend. The Koroneiki olive accounts for roughly 60% of Greek olive production and is one of the most phenolic varieties in the world when harvested at the right moment. Sparta Gourmet's growers harvest early, and the mill cold-extracts below 27°C. Early harvest is a deliberate choice that costs more in labor and produces less oil per kilo.
The result: polyphenol counts in the 350–500 mg/kg range depending on harvest year, acidity below 0.3%, and a flavor profile that peaks in the first three months from opening and slowly rounds out over the following year.

How to use it
Sparta Gourmet is the everyday workhorse. It performs under moderate heat — sautéing aromatics, roasting vegetables, finishing a pan sauce — better than most supermarket EVOOs because its polyphenol content makes it more heat-stable. It also works as a finishing oil: a drizzle over warm lentils, over a wedge of Roussas barrel-aged PDO feta, over grilled fish just off the heat.
