Like all genuine extra virgin olive oil, it's a good source of monounsaturated fats and naturally free of cholesterol. What sets a high-polyphenol EVOO like Sparta Gourmet apart from refined seed and vegetable oils isn't calorie count — virtually all cooking oils sit around 120 calories per tablespoon — it's fat composition and antioxidant content.

Why Fat Composition Matters More Than Calories

Extra virgin olive oil is predominantly monounsaturated fat (oleic acid), which research associates with better cardiovascular markers than the saturated fats in butter or the highly refined polyunsaturated fats in many seed oils. Refined vegetable and seed oils — canola, corn, soybean — typically carry a higher proportion of polyunsaturated fat and are processed with heat and chemical solvents that strip out the antioxidant compounds naturally present in cold-pressed EVOO.

Where EVOO Pulls Ahead: Polyphenols

The meaningful difference isn't on a standard nutrition label at all — it's polyphenol content, and it varies enormously between a genuine high-polyphenol EVOO and a refined oil.
