Palirria was founded in 1957 in Politika village, on the island of Evia, Greece, by Antonis and Nota Soulioti — starting in their family kitchen with a single hand-rolled dolmades recipe. That recipe spread by word of mouth, demand grew, and a small family artisanship became the world's leading dolma producer.
