This is not espresso. This is not filter coffee. This is Greek coffee — finely ground, brewed slowly in a small copper or stainless briki, and served in a small cup with the grounds settled at the bottom. It is a ritual as much as a beverage.

How to Brew Greek Coffee

1. Add cold water to your briki (small Greek coffee pot) — one demitasse cup per serving
2. Add 1 heaped teaspoon of Papagalos coffee per cup
3. Add sugar to taste: sketos (no sugar), metrios (one spoon), or glykos (sweet)
4. Stir to combine, then place over low heat
5. Watch carefully — as the coffee heats, a foam (kaimaki) will form on top. Remove from heat just before it boils over.
6. Pour slowly into your cup, preserving the kaimaki. Wait 2 minutes for grounds to settle. Sip slowly.
