The first world is ancient: ellinikos kafes, Greek coffee brewed in a copper briki, served in a small cup with grounds at the bottom, sipped slowly over a long conversation in a kafeneion.

Part 1: The Ancient Tradition — Ellinikos Kafes
What Is Ellinikos Kafes?
Ellinikos kafes is made by simmering very finely ground coffee with cold water in a small long-handled pot called a briki. Never filtered — poured directly into a demitasse cup where the grounds settle over 2-3 minutes. The thick foam on top — the kaimaki — is the mark of a well-made cup.

How to Order: Sugar Levels
- Sketos — no sugar
- Metrios — one teaspoon (most common)
- Glykos — two teaspoons
- Vary glykos — three teaspoons (very sweet)
Sugar must be specified before brewing — you cannot add it after without destroying the kaimaki.
The Kafeneion: Greece’s Original Third Place
The kafeneion is the traditional Greek coffee house — where men have gathered for centuries to drink ellinikos kafes, play backgammon (tavli), and debate politics. It is a social institution, not a cafe. Time moves differently there. Traditional kafeneia still exist throughout Greece, largely unchanged from a century ago. Walking into one and ordering a metrios is one of the great travel experiences in Greece.
Part 2: The Modern Revolution — Freddo Espresso & Freddo Cappuccino
The Origin Story
In 1991, at a trade fair in Thessaloniki, a Nescafé representative shook instant coffee with sugar and water in a cocktail shaker until cold and frothy. The frappe was born — and dominated Greek coffee culture for decades.
As espresso machines spread through Greek cafes in the 2000s, the frappe evolved. The Freddo espresso and Freddo cappuccino replaced it as the defining drinks of modern Greek cafe culture. Today they are the most ordered coffee drinks in Greece by a significant margin.
Freddo Espresso: The Cold Double Shot
A double espresso shot is shaken vigorously with ice until cold and frothy, then poured over fresh ice in a tall glass. The shaking — not just pouring over ice — creates a thick creamy cold foam on top. Bold, intense, slightly bitter, with a smooth cold finish.
Freddo Cappuccino: The Cold Frothy Version
Same shaken espresso base, topped with cold frothed milk (not steamed — frothed cold with a hand frother). Creamy, slightly sweet, layered. The most popular coffee drink in Greece.
How to Make Freddo Espresso at Home
- Pull a double espresso shot
- Add sugar if desired and stir to dissolve while hot
- Pour over ice in a cocktail shaker
- Shake vigorously 15-20 seconds until very cold
- Pour over fresh ice in a tall glass — foam sits on top
- Serve with a straw and cold water on the side
For Freddo cappuccino: froth 60-80ml of cold milk with a hand frother until thick and foamy, then spoon over the shaken espresso.

- You will not be rushed — sitting for hours over one coffee is normal and expected
