Marinated Olives with Feta Cheese

Ingredients
  • 1 cup of olives (200 gram)
  • 3 bay leaves
  • 2 tablespoons of rosemary
  • 5 leaves of scented geranium (arbaroriza)
  • Ā½ cup extra-virgin olive oil
  • 1 lemon (organic, juice and the peel)
  • 1 lemon in slices
  • 3 garlic cloves (thinly sliced)
  • 2 tablespoons fresh parsley (chopped)
  • 1 teaspoon dried oregano
  • 1 cup feta cheese crumbled or in cubes (200 gram)
  • 1 teaspoon peppercorns
  • 1 stem spring onion (chopped)
  • Pita bread, cut into wedges

Instructions
  1. Mix all the ingredients in a bowl.
  2. Let them stand for 24 hours in a cool place.
  3. Serve them with nice warm bread or as a part of a lovely meze or appetizer.
